Pasta Salad with Gröna Ärt-Sedanini

Our Sedanini Gröna Ärtor is a favourite of ours, precisely because it has a lovely balance between natural sweetness and a good bite. Since it's made from 100% organic pea flour, you get a natural source of protein and a high fibre content. The fibre means the energy is absorbed evenly by the body, giving a pleasant feeling of fullness that lasts without leaving you feeling heavy afterwards.

What makes this pasta pair so well with dill, lemon and mint is its character – it's round and nutty in flavour, yet light enough to carry a fresh emulsion. Rather than weighing the dish down, the pasta helps bring out the aromatic herbs and the crisp fennel. Together with the umami of nutritional yeast, you get a dish that feels both luxurious and uncomplicated. This is exactly the kind of food that shows gluten-free can be the best there is, when you let the ingredients take the lead!

ingredients

  • 165 g da Carla Sedanini Gröna Ärtor
  • 1/2 fennel
  • 1/2 cucumber, medium-sized
  • 4 msk nutritional yeast
  • 3 msk olive oil
  • lemon (zest from half, juice to taste)
  • 1 msk dill (frozen or fresh)
  • 1 handful fresh mint (roughly chopped)
  • a handful fresh parsley (roughly chopped)
  • 1 handful radish sprouts
  • pink peppercorns & toasted pumpkin seeds

Here's how

  • Shave the fennel thinly. Dice the cucumber into small pieces.
  • Boil 165 g sedanini in salted water for about 4-5 min. Drain once it has a bit of bite. Save 0.5 dl of the pasta water.
  • Whisk together olive oil, nutritional yeast, lemon zest, lemon juice and dill in a bowl.
  • Fold the warm pasta into the bowl with the dressing. Add the fennel, cucumber and frozen dill. Stir in the pasta water gradually until you have a glossy coating. Fold in the fresh mint just before serving.
  • Divide between two deep plates. Finish with radish sprouts, fresh parsley, crushed pink peppercorns and pumpkin seeds.
  • Serve as it is or top with cured salmon, warm-smoked salmon, hand-peeled prawns, grilled chicken, marinated white beans or edamame beans for an even heartier meal.
